Being stuck at home for almost a month already has caused me to have a lot of time to experiment with different foods and flavors. It has made my mornings a lot more fun as I have time to create pretty things again, instead of a simple bowl with oats and chopped up apples.
I have been making the mealtimes exciting by putting more effort and love into the process, because it is important to treat yourself during this time and why not do that in a fun and healthy way!
Today I had these healthy vegan pancakes with berries, hopefully you love the recipe!
- 1 Cup of any plant-based milk
- 1 1/2 Cup of buckwheat flour
- 1 Ripe banana
- Vanilla extract
- 1/4 Teaspoon of baking soda
- 1/2 Teaspoon of apple cider vinegar
- A few Raspberries
- A few blueberries
- A banana
Start by mashing up the banana into a bowl, add the plant-based milk and stir well. I used unsweetened almond milk for this recipe but you can use anything you like. Into the wet ingredients add the buckwheat flour and again mix everything well together.
In a separate little bowl of container mix the baking soda and apple cider vinegar so it starts to bubble up. This magical mixture will make the pancakes extra fluffy!
Add the magical mixture and the vanilla extract to the pancake batter and mix well.
Now take a non stick pan or add a tiny bit of oil into a regular pan. With a spoon you use for sauces or a 1/4 measuring cup add the batter into the pan and create little circles. There fit about 3 little pancakes into a regular size pan.
You will end up with about 8 mini pancakes depending on how big you made them.
Place two pancakes on top of each other on a plate. Add some sliced banana on top and again add two mini pancakes. Than put some raspberries on that layer and add two mini pancakes on top. Finally add the blueberries and two pancakes on top. And for some extra topping add some of the leftover fruit!
Then it is time to enjoy!
