My typical breakfast is a bowl of warm oats and a piece of fruit. However lately I have been getting a bit bored by eating that every single day. Especially during warm days I crave something more cold. So I have been trying to find an alternative which is just as filling and healthy but is great for those days where I just feel like having something else. I have to say that I have found the perfect option…
Fruity Overnight Oats!
Ingredients:
- 1/2 cup of old fashioned oats
- 1/2 cup plant based milk of your choice or water
- 1/2 cup of raspberries (frozen of fresh)
- Fresh raspberries & grapefruit as a topping
- Shredded coconut
Directions:
In a jar with a lid add the 1/2 cup of old fashioned oats. Pour the plant based milk or water if you prefer into the jar with oats and screw on the lid. Place the jar into the fridge and let the oats absorb the liquid for at least 6 hours or preferably overnight.
When the oats are nice and done, take a tall glass and add pour in of the oats.
For the raspberry sauce add the 1/2 cup of raspberries into a pan and heat them up till they start to soften and become a sauce. You can also place the raspberries in a container and heat them up in the microwave, which will safe you some time.
Pour some of the raspberry sauce on top of the oats and add the other half of the oats on top. Finally add the rest of the raspberry sauce and place some grapefruit pieces, raspberries and shredded coconut on top.
Then it is time to enjoy!
