Don’t get me wrong, I love my oatmeal in the mornings. However, now that the weather is getting warmer, I have been craving colder foods which give me that light feeling inside. So I have tried to create a new breakfast that feels fresh and light, but still keeps me full and satisfied throughout the day.

Quinoa is one of my favorite things to cook with as it tastes great hot as well as cold. This makes it such a versatile food to create meals with. I love adding it to salads, curries and crock-pot meals, but I haven’t been using it a lot in a breakfasts lately . So I thought it would be a fun challenge to create a delicious fresh breakfast with quinoa.

  • 1 cup of plantbased milk (I used almond milk)
  • 1/4 cup dry quinoa
  • 1 banana
  • 1/2 cup of frozen blueberries
  • 10 raspberries


Start by making the quinoa porridge. First rinse the quinoa well. In a pot add 1/2 cup of water, put it on the stove and wait till it boils. When the water starts boiling add 1/4 cup of quinoa to the pot and turn down the heat to medium. Cook the quinoa for 15 minutes until it has soaked up all the water and it is fluffy.

Use half of the banana and mash it up with a fork. Add the mashed banana into the pot with quinoa and mix it well. You can always add a little water or almond milk if the quinoa mixture is getting a little too dry.

When the quinoa had some time to cool down, put in a bowl and add the cold almond milk.

In the microwave heat up the blueberries until they create a sauce like consistency but still have bits of berries in it. Add the warm sauce to the bowl. I added it on the side of the bowl into the almond milk and sprinkled a bit on top for some extra color.

For toppings add the raspberries and the other half of the banana which you can cut into slices.

What I love most about this breakfast is that it is so simple and easy to make, especially if you cook the quinoa in bulk and keep it in the fridge. A breakfast to me need to be quick to make as I don’t have a lot of time in the mornings before going to school. If you keep a big batch of quinoa in the fridge, this breakfast can be made every morning in less than 2 minutes, which is so awesome!
