Spring is finally here!
Warm weather is coming and it’s almost Easter, which means a delicious fresh spring salad is the perfect dish for this time of the year!
I love salads like this because they make me feel so light inside and actually keep me motivated at night to be productive and go out of the house. Heavy meals can make me feel sluggish, so I have been trying to eat some lighter meals lately which have been doing so well with my body and my mind.
- 2 cups Lambs Lettuce
- 1 apple
- 4 radishes
- Green Beans
- Millet or Couscous
- Balsamic Vinegar
- Lemon Juice
Start by cooking the millet or couscous, which ever you prefer, as explained at the back of the package. While the grains are cooking, cut off the ends of the green beans and bring them to a boil. When the water starts boiling, turn down the heat and cook for another 10 minutes.
When the millet and beans are done, let it cool down so they are ready later to add to the cold salad.
Cut the cucumber, apple and radishes into very thin slices and mix it in with the lambs lettuce. When the millet and beans are cooled down mix them in as well.
For the dressing mix some balsamic vinegar, a little bit of lemon juice and some water to delute. In between adding water and lemon juice do a little taste test to see how strong you want the taste of the dressing to be. Add the dressing to the salad and it is ready to serve!
