Today I am sharing with you this delicious warm salad which is great on colder days to keep you warm, but still gives you that light and energetic feeling inside which a salad gives you.
The savory flavor of the kale, chickpeas and pumpkin, with the sweetness of the baked apple and the sourness from the balsamic and orange dressing
create such a beautiful balance, which is perfect to satisfy every craving.
- Cooked chickpeas
- Balsamic vinegar
- Fresh juice from one orange
Start by cutting the pumpkin into small cubes.
You can bake it in the oven until it gets golden brown or in a grill pan, both work perfectly.
In the mean we will make the dressing. For the dressing mix the orange juice and balsalmic vinegar in a small bowl. I have chosen to not add any measurements because this dressing is best if you taste while adding more balsamic vinegar, so you get the perfect flavor according to your taste.
Cut the apple into slices and cut them in half. Bake these in a pan until they start to become more soft. That is when it is time to add the kale, cooked chickpeas and the dressing. Cook until the kale softens.
Finally add the baked pumpkin cubes and enjoy this warm salad on a cold winter evening.
