Healthy Vegan Apple Turnovers

When I was younger my mom used to make apple turnovers quite often. In the Netherlands we eat them a lot! I haven’t had them in a few years because they are full of sugar and they aren’t healthy or vegan. So today I made a healthy and vegan version. Normally I don’t really eat flours and other grains. However every once in a while I love having pancakes, banana bread or apple turnovers as a treat. 

These definitely taste different, however I love them just as much. Normally apple turnovers have a really soft and airy texture, these are very crunchy, more like a cookie. I have made these a few times already because I used to make my own oat flour which wasn’t a success and the other time I didn’t use enough banana. They tasted great but they didn’t look very pretty. Every time I made them I ate them in less than a day, they were so good.


  • 1 banana
  • 1/2 cup oat flour 
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla powder
  • 1 apple
  • 1/4 cup unsweetened raisins
  • cinnamon


Preheat your oven to 175°C.

In a bowl mix the oat flour, vanilla powder and the baking powder. With your hands mix in a banana until you have a dough consistency. If your mixture is too wet add some flour, if too dry add more banana. Put the dough ball into the fridge for about 30-60 minutes so it is easier to work with later.

Apple Turnover

In the mean while make the filling for the apple turnovers. Peel the apple and cut the apple into small cubes. Put the apple cubes in a pan together with a tiny bit of water and the raisins. Cook until nice everything is nice and soft. You can add some cinnamon into the apple mixture for some extra flavor.

Take out the dough from the fridge and take two pieces of parchment paper. Put the dough in between the two sheets and with a rolling-pin, make the dough flat, about 1/4-1/2 centimeter thick. Now cut out some rectangles (10×10 centimetres) Put the filling on to middle of the rectangles and take one corner and fold it over the filling, onto the other corner. With your finger press the sides together so the filling is completely surrounded with dough. Finally with a fork go around the edges to get a beautiful design and to make the dough stick even better together.

Put the apple turnovers into the oven for about 30 minutes. If you want you can sprinkle on some extra cinnamon and finely grated coconut which looks just like sugar!
