Spicy & Filled Vegan Tomato Soup

It’s that time of the year again, cold weather, sore throats and stuffy noses. Sometimes just resting isn’t enough to get rid of these things, that is where changing up your food choices comes into place!

Personally I love fixing health problems the natural way. There are many tips and tricks that I use when I am feeling sick, which I will share with you soon. Lately I learned that cayenne pepper is a great way to get rid of a sore throat. I didn’t really know how to use that into my food, so I created this spicy and warm soup which is great for when you feel sick.

Ingredients:

  • 2 cups tomato juice
  • 1/2 cup finely chopped cauliflower
  • 1/2 cup finely chopped broccoli
  • 1/2 cup finely chopped bell pepper
  • 1/8 cup chopped leek 
  • pinch of cayenne pepper
  • 1/4 tsp ginger
  • 1/4 tsp paprika powder
  • 1/4 tsp dried basil   
  • (pinch of salt) 

Soup

Directions:

Start by pouring the tomato juice and spices into a pan. Mix everything well and put it on the stove. When the tomato juice boils add the vegetables. Cook until the vegetables are nice and soft.

Serve the soup in a mug and you can garnish it with some spring onion if you like.
