Summer is almost over and fall is right around the corner. So lets combine the fresh summer fruits, with soft fall flavours! That combination turns into these delicious sweet potato toast with fruity toppings!
As much as I am going to miss the summer days, fresh fruit and summer dresses, I am so ready for fall. I can’t wait to wear warm and cute clothing, sit near the fireplace for the first time of the year and enjoy the delicious local apples! So for this ‘transition season’ I created these sweet potato toasts which are so delicious and a filling breakfast.
- 1 Sweet potato
- 1/2 Banana
- 1/2 Apple
Start by washing the sweet potato and cut it in half. Now cut off the excess from the sweet potato halves, this way you get two slices sweet potato (about a cm thick).
Bake the sweet potato slices in the oven (or microwave) until they are a little soft. Now put them in a grill pan or a sandwich toaster. Bake them on both side so you get a crispy sides.
Mash the raspberries and spread it on to the sweet potato slices. Now add the banana slices. For the apple topping, sprinkle some cinnamon on the sweet potato slice and add the apple slices.
