I love cooking, but on busy days I just want something quick and still delicious. This baked oatmeal takes just a minute to whip up and when you put it in the oven you have time to do some work. When you hear the oven beep you know that it is time to put everything down and just take a little moment to eat your delicious blueberry baked oatmeal. Which will help you to keep energetic throughout the day to get the work done.
During the holidays the frozen fruits are back in stock, like raspberries, mango and red fruits. However, to me blueberries are the exceptional berries. When they are fresh they are the most expensive berries out there, but in the frozen section they are a lot more cheap. So once in a while I like to get fancy and buy a box, mostly for in my Nice Cream. However, today I chose to make a baked oatmeal for breakfast.
- 1/2 a cup(50 grams) oats
- 120 milliliter plant-based milk
- 1 banana
- dash of cinnamon
- 1 tsp coconut sugar (optional)
- 1/4 cup blueberries
- 1/4 teaspoon baking soda
- 1/2 cup blueberries
Preheat the oven at 190°C.
First mash your banana and mix in the plant-based milk. Now add the oats and cinnamon (and sweetener if you want) and mix everything well. Just before you put the oatmeal in the oven add the baking soda, mix again and finally add in the blueberries.
Put the mixture in a small baking tray and put it in the oven.
For the blueberry sauce, just put the blueberries in a small sauce pan and cook until you can mash them. Mash them just a bit and pour the sauce over the baked oatmeal when it is out of the oven.
