Vegan Red Fruit and Oatmeal Parfait

Even though berry season is over, you can still get them frozen. Which I am so happy about, because berries aren’t only delicious, they are a great to colour food naturally too.

As you probably know, I love being creative with food and my main goal is most of the time to make it look good. So berries, beets and other very pigmented fruits and vegetables are always one of my favourite things to use because they make everything look so pretty.

This is a very quick recipe (I could even make this before going to school, and I really did not have a lot of time today), it’s filling, delicious and it feels like you are eating dessert!


  • 1/2 cup oats
  • 1 cup water or non-dairy milk
  • 1 cup red fruit (frozen)
  • 1/2 – 1 banana (to sweeten, but is optional)


First put water into a saucepan and cook until the water starts to bubble. Now add the oats into the saucepan and cook until you get a thick consistency. If you want to make your oatmeal sweeter, you can add 1/2 to 1 mashed, ripe banana.

In another saucepan or microwave, heat up the red fruit. You should end up with not only warm fruits, but probably there is some juice too. Take the juice and add it to your oatmeal. Mix well until the oatmeal starts to get pink.

Take a glass and start layering the oatmeal and warm fruit. Use about 1 tablespoon for every layer. Make sure you have oatmeal on the top of your glass, so you can decorate it with some leftover fruit.IMG_9092 edit smallerI hope that you all started your day as well as I did and hopefully you all have a beautiful upcoming week!
