No yogurt needed for a good and tasty parfait! I truly believe that you can recreate all recipes that you love with just whole plant-based foods. The best part about it is that you have to get creative and start experimenting with different ingredients, textures, colors and flavours.
I love parfaits, you can add in all your favourite ingredients, create something delicious and it always looks great! As I am completely getting in to the fall mood and I just can’t stop experimenting with different fall recipes, I knew I had to create a vegan fall parfait. This one is great for people with who love a bit of spice and have a sweet tooth like me!
- 1 banana
- 1 apple
- 1-2 rice cakes
- unsweetened raisins
- 1/2 walnut
Start by peeling your apple and cut it into small pieces. Put it in a saucepan with just a small amount a water, so the apple pieces won’t burn. Cook your apples until they are soft and mash them until it becomes an apple sauce. Mix in a bit of cinnamon for the taste and color.
While your apples are cooking mash a banana and mix in some cinnamon for color and flavour.
Crush 1 to 2 rice cakes into smaller pieces, if you have unsweetened poffed rice on hand you can use them too.
In a small and pretty glass, add a few rice pieces, now add a bit of the banana mixture, then a few raisins, then some apple sauce. keep repeating this cycle until you are at the top of your glass. Have some apple sauce or some of the banana mixture on top and finish it with half of a walnut or some raisins.
