At home we ate pumpkin rarely. But since pumpkins have been grown magically in our garden, I have been eating them much more often and I am loving it!
A few months ago our chickens were caught by the fox, even though we were mad and in shock, something magical happened in the period that we didn’t have chickens. All the seeds from the food remains that we gave to our chickens, had turned into beautiful tomato and pumpkin plants! I got so excited and couldn’t wait to create a delicious recipe with one of the pumpkins!
Ingredients:
- 1/2 a small pumpkin (red Kuri squash)
- 1 carrot
- 10-12 Brussel sprouts
- 7 mushrooms
- 5 thick slices zucchini
- 1 apple
- hand full of mixed lettuce
Directions:
Cut up half of your small pumpkin in large cubes, carrot in slices and Brussels sprouts in half and steam them until they are almost ready and soft.
Now cut up you mushrooms in half and zucchini slices in quarters and add these to the steamer and steam until all the vegetables are nice and soft.
Cut up you apple in cubes and put it in a bowl, together with a hand full of mixed lettuce. When the vegetables are ready and cooled down a bit, add them to your bowl and mix well.
If you want you can add a healthy dressing that remembers you of fall, like an apple cider vinegar with cinnamon dressing. Personally I like my salads plain, so I enjoyed this salad all on it’s own.
