Vegan Sweet Potato Pizza Crust with Homemade Tomato Sauce

pizza, dinner, tomato sauce, sweet potato, vegetable,

Evening alone with my sister are probably the best moments at home. We cook our own favourite food together, eat in front of the television and watch great movies. Today my sister got a pizza and I thought ‘Why not make my own healthy pizza with tomato sauce?’. As sweet potato is my favourite starch-based food, I wanted to try to make my crust out of this amazing food.

I am going to be honest with you if you want a truly crispy pizza crust, this might not be the perfect recipe for you. The edge of the pizza crust is crunchy, but the inside is pretty soft. Even though it isn’t as crispy as I hoped it would be, I still wanted to share this recipe with you because it still tasted amazing! The sweetness of the sauce together with the sweetness of the potatoes is such a great combination.

pizza, dinner, tomato sauce, sweet potato, vegetable,

  • 1 large sweet potato
  • pepper (as much as you desire)

Tomato Sauce:

  • 1/2 onion
  • 3 tomatoes
  • 1/4 tsp garlic paste
  • 1 teaspoon italian spices
  • 2 tbsp tomato paste

Preheat your oven at 210 °C

Start by pealing your sweet potato and cut it in half. Put in in a cooking pot with water and cook for 10 minutes. Drain the potatoes and let it cool down. If you don’t have a lot of time you can add cold water into the pan, to cool down the potatoes faster.

Grade the potatoes and put it into a mixing bowl, now add as much pepper as you want and mix carefully.

Put some parchment paper on a baking tray and spread the sweet potato ‘mixture’ out on the baking tray. Make sure that it isn’t too thick, but not too thin either. When the crust heats up in the oven it crimps, so when it is too thin it might create some cracks. Put in the oven for about 15 minutes.

Cut up 1/2 a onion into cubes, add it into a saucepan together with the garlic paste. I like to saute this in some water instead of oil. Saute until the onion gets translucent. Now cut up your tomatoes and add them into the sauce pan together with the tomato paste. Mix well until it has heated up and it starts to become a sauce consistency. Finally mix in the italian spices. Personally I like the texture when you still have a few tomato pieces in the sauce, but if you want a smooth sauce you can first mix the tomatoes, tomato paste and italian spices in a blender and later add it to the sauteed onion and garlic.

When the crust comes out of the oven, pour over the sauce and put some of your favourite topping on top. I added some tomatoes, broccoli, red bell pepper, zucchini, fresh basil and tofu. Unfortunately we didn’t have mushrooms and pineapple, because they are my absolute favourite.

Put the pizza back in the oven for about 10 minutes. Enjoy!

I hope that you all enjoy the last moments of summer, even though I am excited for fall, delicious apples and forest walks, I really don’t want to say summer goodbye. Watermelon, walking barefoot in the grass and wearing dresses are all things that I feel so sad about letting go.

keep dreaming
