Berries are great, but if I have to choose my favourite berry it would definitely be the raspberry. There are extremely sweet, juicy and full of flavor. Now we are in the middle of the raspberry season and our raspberry plant is full of little fruits I have been using them in different recipes. They really sweeten up everything you make (try adding them into your pancakes, it’s ssoooo good!) and turn your boring looking cookies into vibrant treats!
- 1/4 cup oats
- 2 tsp flour of choice (I used buckwheat)
- 1/4 tsp baking powder
- 2-3 tbsp unsweetened applesauce
- 1/4-1/2 tsp vanilla powder
- pinch of cinnamon (optional)
- a few raspberries
Start by mixing all the dry ingredients together in a mixing bowl. When all the dry ingredients are mixed well add in the apple sauce and mix again.
Take a plate and spray it with some oil or put a piece of parchment paper on top. Now create two circles with the cookie batter on the plate. Cut your raspberries in halve and carefully push them into the cookie. Place the cookies into the microwave and bake them for 4-5 minutes. If you used less applesauce you might want to take them out of the microwave a little faster. Let them cool down so they harden up a bit.
They taste amazing just like this, but they are even better on top of some raspberry nana ice cream!
Lately I have been obsessed with cute, old fashioned spoons, forks, cups and plates. So I went to a few different thrift stores this week and bought some beautiful pieces. I can’t wait to use the great things I bought for in my food pictures and I hope to find some more soon.
