How many people would say that they can’t give up chocolate? I used to be one of them, the only thing I put on my sandwiches and crackers was Nutella, a LOT of Nutella to be honest. But by switching to a healthier lifestyle I saw that it was so easy to find healthy alternatives for chocolaty things. To be honest I am not a fan of chocolate anymore, however sometimes I like to have a bit of chocolate nana ice cream or a healthy brownie like today. So that’s why I created this healthy vegan brownie & strawberry nana ice cream parfait.
- Ice cream:
- 1 frozen banana
- 1 tsp carob or cacoa powder
- 1 1/2 tbsp flour of choice
- 1/4 tsp baking powder
- 1 1/2 tsp unsweetened applesauce
- 1 1/2 tbsp water/plant based milk
- 2 tsp cacao
- 1/2 – 1 tsp carob
- a few tsp liquid sweetener of choice (optional)
- a few cut up strawberries
Start by making the brownie bites by mixing all the dry ingredients in a mixing bowl. Add the milk and applesauce and mix again. You can taste when the mixture is ready, if you feel like you want a little more of a chocolate flavour you can add some cacao or carob powder. Do the same with the sweetener if you feel like using that.
Take a mug and add some (coconut) oil on a paper towel and grease the inside of your mug. Put the mixture in the microwave for about 30 sec- 1 min. If you want a more gooey textured brownie leave it in shorter, for a cake consistency leave it in longer.
Take the mug out of the microwave and carefully take the brownie out of it. Cut your brownie into small brownie bites to put in your ice cream parfait later.
For the ice cream put your frozen banana into a food processor together with the carob or cacao powder and mix well. Cacao is a little more bitter than carob, but cacao has a more chocolate flavour. I used carob because I think that it tastes better in banana ice cream. It’s up to you what you choose, you can taste both and see what you like best.
Now add a spoon of banana ice cream in a glass, add some strawberries and brownie pieces. Keep doing this untill you are add the top and you used all the ingredients.
After making these brownies my microwave/oven died (not because of the brownies though : ) ), so I hope that it can be fixed quickly. How am I ever going to create some of the recipes that have been in my head for days, without my microwave and oven?
