Healthy Vegan Cherry Pancake With Vanilla Ice Cream And Cherry Sauce Recipe

Cherrypancakes with vanilla ice cream and cherry sauceI still remember the first time I had my grandmothers cherry pancakes with ice cream, my tastebuds were exploding! The combination of the warm pancake, the cold ice cream and the sweetness of the cherries was something I had never experienced before. Recently this memory popped into my mind and I knew I had to create my own version of my grandmothers cherry pancake with vanilla ice cream and cherry sauce and share it with you.

There would be this one special day in the summer that our whole family would come together to eat these pancakes at my grandfather and grandmothers house. We were enjoying the smell of our grandmother who was baking, while waiting to get our first cherry pancake. When our grandmother would walk to the enormous freezer and take out a big bar of vanilla ice cream, all the children looked at her open-mouthed. 

Cherrypancakes with vanilla ice cream and cherry sauce

Cherry pancake:

  • 1 banana
  • 1/4 cup milk of choice
  • 1/6 -1/4 cup flour (I used buckwheat flour)
  • 1/2 teaspoon vanilla powder
  • 1/2 teaspoon baking soda
  • 6-8 cherries

Cherry sauce:

  • 6-8 cherries

Vanilla ice cream:

  • 1 frozen banana
  • 1/2 – 1 teaspoon vanilla powder


Start by cutting up the cherries for the sauce into small pieces. Add them in a small saucepan and cook them untill they are soft. Make sure you check the cherries every few minutes because you don’t want them to burn. When they are soft you can try mashing them a little more. Leave the sauce on the stove untill it becomes a thick sauce like consistancy.

For the pancake start mashing your banana and mix in the milk. When mixed well add in the flour, vanilla powder and baking soda and wisk again. Add a little bit of oil in your pan and pour most of your mixture in the pan, leave in just a little bit. (We will use this later to pour on top of the cherries. This makes it easier to flip the pancakes without destroying the cherries.) Cut your cherries into 4 slices and push them carefully into the pancakes. Pour the leftover of your mixture evenly over the cherries in the pancake. When the pancake is nice and golden brown on the bottom, flip your pancake carefully. When the other side is golden brown too, you can place the pancake on your plate.

The last step is making the ice cream. Put the frozen banana into your food processor and mix well. Now add in the vanilla powder and mix again.

With a ice cream scoop take out the ice cream and put it on top of your pancake. Finally add some of the cherry sauce and a cherry on top and enjoy!
