I always loved the way spring rolls looked, delicious, fun and so colorful! Personally I am not a big fan of anything processed and I believe that there is an better and more natural alternative for anything processed. So instead of the rice paper I used…..CABBAGE!
My parents weren’t at home tonight, which means that the kitchen is all mine! I love spending time thinking about what to make for dinner without needing to think about what my family does and doesn’t like. I can take all the time experimenting with different flavours and create the perfect meal.
- Cabbage leaves (amount depends on how many springrolls you want to make. One springroll needs one leaf.)
- Vegetables of your choice.(I used cooked beets, cucumber, yellow and red bell pepper, carrot and bean sprouts)
Start cooking your Cabbage leaves in water. While the leaves are cooking cut up your vegetables into long thin strips.
When your Cabbage leaves are totally soft and flexible your can take them out of the hot water and let them cool down on a surface. When the leaves are cooled down start wrapping your vegetables in the leaves.
Fold the bottom and top inwards and if needed put a toothpick in the leaf to keep it in place. Only the one I made in the picture needed a toothpick, the others stayed well in place.Turn your spring rolls the other way around, so the nice side is showing.
Your can cut the roll in halve or eat it like this.
