I don’t know about you but the thing I like best about having a day of is having the time to prepare a delicious and creative breakfast. I took some of my favourite fruits and created this quinoa, fruit parfait. It is sweet, tasty and the perfect breakfast for a sunny Easter day.
- 1 banana (If possible riper than mine)
- 1 apple
- 1 pear
- some grapes
- 1/2 cup of cooked quinoa
- 1 teaspoon of vanilla powder
- high, thin glass or wine glass
First cut up 3-5 thin slices of your banana, cut then in halve and leave them on the side. Mash the rest of your banana and mix in the vanilla powder. Now cut up your apple and pear in cubes and the grapes in halve.
Now start layering your parfait. Start by placing a tablespoon of quinoa in your glass. Now take a knife and use this to carefully place the banana slices on top of the quinoa, facing the glass. Add a tablespoon of quinoa on top of the banana, a layer of quinoa will be on top of every fruit layer. Add your pear cubes with the skin facing the glass, add quinoa, the apple cubes, quinoa, grapes and finally the last tablespoon of quinoa. On top of this layer add the banana vanilla frosting. Finally you can add some leftover fruit for decoration.
I loved creating this parfait and I enjoyed every bite of this fruity goodness.
